क्या है सरसों का तेल?

सरसों का तेल इसके पौधे से प्राप्त किए बीजों से निकाला जाता है। जिसे अलग-अलग भाषाओं में विभिन्न नामों से जाना जाता है। इसे अंग्रेजी में मस्टर्ड, मराठी में मोहरीच, मलयालम में कदुगेना और तेलुगु में अवन्यून बोला जाता है। वहीं, इसका वैज्ञानिक नाम ब्रेसिका जुनसा है। सरसों के बीज लाल, भूरे और पीले रंग के होते हैं। जिनसे मशीनों की मदद से तेल निकाला जाता है। जिसका प्रचलन भारत में सबसे अधिक है। यहां भोजन के लिए हर रोज इसी तेल का उपयोग किया जाता है। क्योंकि सरसों का तेल खाने का जायका बढ़ाने के अलावा भोजन को पौष्टिक भी बनाता है।

 
सरसों तेल के प्रकार-
रिफाइंड सरसों का तेल :

सरसों का यह तेल स्वाद में थोड़ा कड़वा होता है। जिसे सरसों के भूरे, काले या सफेद रंग के बीजों से निकाला जाता है। सरसों के इस तेल को मशीनों की मदद से तैयार किया जाता है।

 
ग्रेड-1 (कच्ची घानी) :

यह सरसों के तेल का सबसे शुद्ध रूप होता है। इसलिए ज्यादातर भारतीय घरों में भोजन बनाने के लिए इसी तेल का उपयोग किया जाता है। यह तेल सेहत के लिए भी बेहद लाभकारी माना जाता है। भारत में यह तेल कच्ची घानी के नाम से अधिक लोकप्रिय है।

 
ग्रेड-2 :

एंटी बैक्टीरियल, एंटीफंगल और एंटीइंफ्लेमेटरी के लिए

सरसों का तेल एंटी बैक्टीरियल, एंटीफंगल और एंटीइंफ्लेमेटरी गुणों से संपन्न होता है। इसमें मौजूद एंटी-इंफ्लेमेटरी एजेंट सूजन संबंधी परेशानियों से छुटकारा दिलाने में मदद करते हैं। एंटीफंगल गुण होने के कारण यह तेल फंगस के प्रभाव को कम कर, त्वचा पर फंगस के कारण होने वाले रैशेज और संक्रमण को ठीक करने का काम करता है। एंटीइंफ्लेमेटरी गुण होने के कारण इस तेल को डिक्लोफेनाक नामक एंटीइंफ्लेमेटरी दवा के निर्माण के लिए भी उपयोग किया जाता है। वहीं, मस्टर्ड ऑयल से रिलेटेड एक रिसर्च रिपोर्ट में बताया गया है कि सरसों के तेल में अनावश्यक बैक्टीरिया और अन्य रोगाणुओं को पनपने से रोकने की क्षमता भी होती है।

बढ़ती उम्र के लिए (एंटी-एजिंग)

सरसों का तेल बढ़ती उम्र के प्रभाव को कम करने में सकारात्मक प्रभाव प्रदर्शित करता है। दरअसल, शरीर में ओमेगा-3, ओमेगा-6 फैटी एसिड, विटामिन ई और एंटीऑक्सीडेंट जैसे तत्वों की कमी होने से उम्र बढ़ने की समस्या तेज होने लगती है। चूंकि सरसों के तेल में यह सभी तत्व प्रचुर मात्रा में पाए जाते हैं। इसलिए माना जाता है कि सरसों का तेल बढ़ती उम्र के प्रभाव को धीमा करने में कारगर है।

एनसीबीआई की वेबसाइट पर प्रकाशित एक मेडिकल रिसर्च के अनुसार, सरसों के तेल में फैटी एसिड पाया जाता है। जो सबसेलुलर मेम्ब्रेंस (उपकोशिकीय झिल्ली) की संरचना में परिवर्तन लाने का काम करता है। ताकि मेम्ब्रेन-बाउंड एंजाइमों की गतिविधि को रेगुलेट किया जा सके। इस प्रकार यह गतिविधि मस्तिष्क के कार्यों के लिए महत्वपूर्ण भूमिका निभाती है। इस आधार पर सरसों के तेल को मस्तिष्क की कार्य क्षमता को बढ़ाने  के लिए अच्छा माना जाता है।

 
रूसी के लिए-

सरसों के तेल में मोनोअनसैचुरेटेड फैटी एसिड, ओमेगा 3 और 6 फैटी एसिड, एंटीफंगल और एंटीबैक्टीरियल प्रभाव मौजूद होते हैं। जो सिर में रूसी की समस्या को पनपने से रोकते और स्कैल्प पर खुजली की समस्या को कम करते हैं। वहीं, सरसों तेल की मालिश बालों के लिए भी अच्छी होती है।

 
हृदय स्वास्थ्य के लिए-

एनसीबीआई (नेशनल सेंटर फॉर बायोटेक्नोलॉजी इंफॉर्मेशन) की साइट पर पब्लिश एक रिसर्च रिपोर्ट के अनुसार, मस्टर्ड ऑयल पॉलीअनसैचुरेटेड और मोनोअनसैचुरेटेड फैटी एसिड के साथ ओमेगा-3 एवं ओमेगा-6 फैटी एसिड से भी भरपूर होता है। जो मिलकर हृदय रोग (रक्त प्रवाह की कमी के कारण) की आशंका को 50 फीसदी तक कम करने का काम करते हैं।

 

एक अन्य रिसर्च रिपोर्ट के अनुसार, मस्टर्ड ऑयल हाइपोकोलेस्टेरोलेमिक (कोलेस्ट्रॉल कम करने वाला) और हाइपोलिपिडेमिक (लिपिड-लोअरिंग) प्रभाव के लिए भी जाना जाता है। दरअसल सरसों का तेल शरीर में खराब कोलेस्ट्रॉल (LDL) के स्तर को कम कर, अच्छे कोलेस्ट्रॉल (HDL) के स्तर को बढ़ाने की भी क्षमता रखता है। जिससे हृदय रोग के खतरों को काफी हद तक कम किया जा सकता है। इसलिए सरसों का तेल हृदय स्वास्थ्य के लिए बेहद लाभकारी सिद्ध होता है।

 
कैंसर के लिए-

एक वैज्ञानिक अध्ययन के अनुसार, सरसों के तेल में एंटी कैंसर गुण पाए जाते हैं। जो कैंसर सेल्स के विकास को रोकने का काम करते हैं। इसलिए सरसों के तेल को कैंसर के उपचार के लिए भी कुछ हद तक फायदेमंद माना जाता है।

 
सरसों के तेल का उपयोग-
  • सरसों के तेल का इस्तेमाल मांसाहारी और शाकाहारी खाना बनाने के लिए किया जाता है।
  • दाल एवं कढ़ी में तड़का लगाने के लिए भी सरसों के तेल का इस्तेमाल किया जाता है।

सरसों तेल के नुकसान-
  • सरसों के तेल में एक इरुसिक नाम का एसिड मौजूद होता है। जो शरीर में अधिक मात्रा में होने पर हृदय के लिए हानिकारक साबित हो सकता है। इसलिए इस तेल का अधिक मात्रा में सेवन करने से बचना चाहिए।
  • सरसों के तेल का अधिक मात्रा में सेवन करने पर दस्त, एनीमिया और श्वसन से संबंधित समस्या हो सकती हैं।
  • कुछ लोगों को सरसों तेल से एलर्जी होती है। इसलिए उन लोगों को इसके सेवन से बचना चाहिए।
कहां पाई जाती है सरसों?

सरसों की खेती हिमालय की तलहटी में व्यापक रूप से की जाती है। वैश्विक स्तर पर यह मध्य पूर्व अफ्रीका और भूमध्य यूरोप में पाई जाती है। भारत में सरसों की खेती राजस्थान, मध्य प्रदेश, उत्तर प्रदेश, हरियाणा और गुजरात के क्षेत्रों में पर की जाती है। इसके अलावा यह आंध्र प्रदेश, कर्नाटक और तमिलनाडु के भी कुछ हिस्सों में उगाई जाती है। पीली सरसों को असम, बिहार, उड़ीसा और पश्चिम बंगाल में रबी की फसल के रूप में उगाया जाता है।

What is Mustard Oil?

Mustard oil is extracted from the seeds obtained from its plant which is known by different names in different languages. It is called Mustard in English, Mohrich in Marathi, Kadugena in Malayalam and Avanyun in Telugu. Its scientific name is Brassica juncea. Mustard seeds are red, brown and yellow in colour from which oil is extracted with the help of machines. Its prevalence is highest in India. This oil is used every day for food here because, in addition to enhancing the taste of food, mustard oil also makes the food nutritious.

 

Types of Mustard Oil

Refined Mustard Oil-

Mustard oil is slightly bitter in taste which is extracted from the brown, black or white-coloured seeds of mustard. This mustard oil is prepared with the help of machines.

 

Grade-1 (Kacchi Ghani)-

It is the purest form of mustard oil. Therefore, this oil is used for cooking food in most Indian households. This oil is also considered very beneficial for health. In India, this oil is more popularly known as Kacchi Ghani.

 

Grade-2-

This oil is used for therapy but not for cooking.

 

Benefits of Mustard Oil

For Anti-Bacterial, Anti-Fungal and Anti-Inflammatory-

Mustard oil is endowed with antibacterial, antifungal and anti-inflammatory properties. The anti-inflammatory agents present in it help in getting rid of inflammatory problems. Having antifungal properties, this oil works by reducing the effect of fungus, healing rashes and infections caused by fungus on the skin. Due to its anti-inflammatory properties, this oil is also used to manufacture an anti-inflammatory drug called diclofenac. At the same time, a research report related to mustard oil states that mustard oil also has the ability to prevent unnecessary bacteria and other microbes from growing.

 

For joint, arthritis and muscle pain-

Types of olive oil

Virgin Olive Oil-

Virgin Olive oil is also prepared by pressing olives for the first time. The extraction process does not follow the stringent standards for extracting such oil. It is slightly lesser in quality than Extra Virgin in terms of taste, aroma, and nutrients. The amount of acidity in this oil may be slightly higher than extra virgin.

 
Refined olive oils-

मछली के तेल को कई खाद्य पदार्थों से अधिक फायदेमंद माना जाता हैं। इसलिए मांसाहार के रूप में मछली का सेवन करना काफी लाभकारी होता है। लेकिन इस बात को बेहद कम लोग जानते हैं कि मछली का सेवन मुख्यतः मछली तेल के लिए किया जाता है। क्योंकि मछली का तेल स्‍वास्‍थ्‍य के लिए काफी अच्छा होता है। मछली का तेल कई औषधीय गुणों से प्रचुर होता है। इसमें मौजूद पोषक तत्व गंभीर से गंभीर बीमारियों से बचाने और स्किन की सेहत को बरकरार रखने का काम करते हैं। यह तेल चिंता, अवसाद, कमजोर इम्यूनिटी, उच्‍च कोलेस्‍ट्रॉल, हृदय रोग, कैंसर मधुमेह, गठिया, अल्सर और सूजन जैसी बीमारियों के इलाज में फायदा करता है। मछली तेल में ओमेगा-3 फैटी एसिड भी अच्छी मात्रा में होता है। इसलिए इसको वजन घटाने, स्वस्थ गर्भावस्था (Pregnancy) और प्रजनन क्षमता (Fertility) को बढ़ाने के लिए इस्तेमाल किया जा सकता है। अंग्रेजी में मछली तेल को फिश ऑयल (Fish oil) बोला जाता है।

 
क्या होता है मछली का तेल?

फिश ऑयल मछली के ऊतकों (Fish tissues) से तैयार किया जाता है। ठंडें पानी में रहने वाली मछलियों से सबसे अधिक फिश ऑयल प्राप्त होता है। मछली के तेल को ओमेगा-3 ऑयल भी कहा जाता है। क्योंकि इसमें ओमेगा-3 फैटी एसिड की भरपूर मात्रा होती है। फिश ऑयल में दो तरह के ओमेगा-3 फैटी एसिड होते हैं। पहला- डोकोसाहेक्सैनोइक एसिड (DHA) और दूसरा इकोसैपेंटेनोइक एसिड (EPA)। आज बाजार में फिश ऑयल के कैप्सूल जैसे उत्पाद भी मौजूद हैं। जिनका प्रयोग सर्दी लगने या सर्दी के कारण बॉडी में होने वाले दर्द से निजात पाने के लिए किया जाता है।

स्वस्थ मस्तिष्क के लिए-

मछली तेल के सेवन से मस्तिष्क को लंबे समय तक स्वस्थ रखा जा सकता है। क्योंकि मछली तेल में मौजूद ओमेगा-3 फैटी एसिड तनाव और अवसाद को कम करता है। इसके अलावा फिश ऑयल घटती स्मरण शक्ति को कम करके याददाश्त को बढ़ाने में भी मदद करता है।

Benefits of Chaulmoogra in skin disease-

All types of skin diseases can be cured by taking 5-6 drops of Chaulmoogra oil with honey. This oil is also consumed by adding butter, ghee, or cream. The patient should take fruits and milk while consuming it as the fruit is sweet in taste. At the time of its use, the use of salt should be completely abandoned. Spices, jaggery, and sweets should also be avoided. If it causes vomiting or nausea, then its use should be stopped.

 
Benefits of Chaulmoogra in Herpes and Leprosy-

Mix the oil of Chaulmoogra with Neem oil or butter and massage it on the 'ringworm' for at least one month. 10 grams of oil should be stored in Vaseline or butter or mixed with Neem oil. The person with leprosy should first be given 8-10 drops of this oil with honey or butter. This leads to vomiting which helps in flushing out the harmful toxins of the body. After that, mix 5-6 drops of this oil in milk, cream, honey, or butter and give it to the patient after meals in the morning and evening. Later, increase the number of oil drops gradually. You can also apply Chaulmoogra oil by mixing it with neem oil. In 'scabies and itching', mix the oil in castor oil and add sulfur, camphor, and lemon juice to it, and apply it to the skin.

By taking 5 drops of Chaulmoogra oil with butter in the morning and evening after meals, the blood disorder starts to disappear. The blood starts to purify.

 
Benefits of Chaulmoogra in eye disease-

Burn the seeds of Chaulmoogra in a closed can. Now cover it with another vessel, so that its smoke does not come out. Add a pinch of rock salt to the mascara obtained from that smoke, mix four to five drops of sesame oil, and a pinch of Surma. Apply the obtained mascara or Anjan to the eyes at night. It cures eye diseases like night blindness, redness of the eyes, etc.

 In Tuberculosis, take 5-6 drops of Chaulmoogra oil with milk or butter daily and mix the butter in this oil and rub it on the chest. This helps to cure Tuberculosis disease.

  • Add Chaulmoogra oil to castor oil. Add sulfur, camphor, and lemon juice to it. It is beneficial in itching and scabies.
  • Grind the seeds of Chaulmoogra with peel and mix it in castor oil. Applying it on the skin cures itching.
  • Grind the seeds of Chaulmoogra and add cow urine. Apply it 2-3 times a day, it provides relief in itching.
  • Applying ripe seed oil of Chaulmoogra is beneficial in skin disorders.
Side-effects of Chaulmoogra
  • Chaulmoogra should be used with caution, as it is harmful to the stomach. Therefore, this oil should be taken after mixing with butter.
  • In case of side effects, milk-ghee should be consumed.
